The Spanish have wholeheartedly adopted this traditional Moroccan casserole brought over by the Moors. The very distinctive dish with the funnel shaped lid. The funnel condenses the steam from the dish as it cooks tenderizing the meat and sealing in flavours. Like Paella the dish takes its name from the utensil.
