A mix for making up to 5 kilos of Chorizo (265 gr pack). Just add pork & wine ! You should be able to obtain tripe or other "sausage skin" from your local butcher. Supplied by "Casa de las Matanzas" in Granada. The "matanza" is the almost ritual annual killing of swine. Ordinarily vast quantities of meats are prepared on the same day for curing to last the year through.
