Miel de caña is effectively what Americans would call molasses. It is derived from the residue left in the vats after sugar extraction. The flavour is sweet, moderately similar to liquorice , with a slightly bitter aftertaste (although not as bitter as American blackstrap molasses!)
The word molasses originally came comes from the Portuguese “melaço” (honey), which is in turn derived from, the Latin word for honey “mel” – which as you already know is the root for the Castillian Spanish word for honey………..Miel !
Unlike refined sugar Miel de Cana is very rich in Iron, Potassioum, Magnesium and B group vitamins.
