Pardina Lentils. are greyish brown on the outside and delicate yellow inside. They have a slightly nutty taste and absorb flavours well, cooking with oils and herbs is highly recommended. Similar to other lentils in that they are high in protein, iron and magnesium, however they retain their shape better and are softer and slightly creamier when cooked. In Spanish Cuisine they are usually served as a base for stews, especially in the North East of Spain “Lentejas a la Riojana” is a perfect and delicious example.
