Garbanzos are a typical Spanish ingredient, often for salads (with tomato, onion and oil), but mainly for stews “Cocidos” (Mid-Spain) and the Andalucian “Puchero”. Garbanzos lechosos are a particularly valued variety, called “Lechoso” (milky) in reference to their white colouur, compared to their more common darker, tougher cousins. Also known as the Garbanzo Andaluz (Andalucian Chickpea), Very forgiving as an ingredient in terms of length of cooking, beautiful cold or roasted as a snack.
